During lockdown, there was no leftover my family wouldn’t crack an egg onto and eat for breakfast: leftover mash, leftover chicken pot pie, the last dribbles of a batch of ham hock soup and once, a lamb chop.

Eventually “Eggs & Anything” infiltrated dinner and our standards dropped even lower: the skillet was dumped on the table along with a pile of forks, a few side plates - maybe, a tea towel as a napkin for the 8-year-old with the large lockdown appetite and away we went.

Lazy egg suppers have hung around in Alert Level 2 - minus the dinner dregs and skillet table service, and with the addition of an actual recipe: Turkish eggs, spicy red shakshuka and spiced bread egg in a hole.

Eggs, dukkah and garlic fried spinach is another favourite combo in our house. What's your favourite?

Some groups work tirelessly to remove invasive wilding trees from the high country, but others now have resource consent to plant them.

The Mid Dome Wilding Trees Charitable Trust, which has spent thousands of hours clearing wilding pines from other sites, is dismayed that the Southland District Council has granted a non-notified consent, with conditions, to Mataura Valley Station, near Kingston, to be planted out mainly in Douglas fir.

The trust is now seeking advice from Government ministers.

Queenstown Lakes is receiving the funding as part of a $36.72m Government package to help regions hard hit by coronavirus.

Queenstown Lakes District Council economic development manager Peter Harris said the money would primarily be used for redeploying or retraining people who had lost their jobs or had hours reduced.
